Sweet and Savory Strawberry Tilapia Tacos
Put a fresh spin on Taco Tuesday with these berry-delicious tilapia tacos! Swapping tilapia for beef makes these a little lighter, and adding strawberries not only gives the tacos a sweet twist, but makes this meal full of potassium, which can keep blood pressure in check.
INGREDIENTS
- 3 Tbsp. Jalapeño (minced)
- Salt to taste
- 6 pieces Tilapia Filets (thin)
- 1 Tbsp. Vegetable Oil
- 6 pieces Tortillas (6”)
- 6 Tbsp. Sour Cream
- 1 cup Red Onion
- 1/4 cup Lime Juice 1 cup California Avocados
- 1 cup Strawberries
DIRECTIONS
To make pickled red onions:
In a bowl, combine red onion with 2 Tbsp. of lime juice and 1/2 tsp. salt; stir and refrigerate for at least one hour.
Tacos:
- Cut avocado and strawberries in 1/4” dice; combine in another bowl with remaining lime juice.
- Season fish with salt to taste.
- Heat vegetable oil in a large sauté pan until nearly smoking; sear fish on both sides until golden brown and cooked through (about 2-3 min. per side depending on thickness of fish).
- Lay tortillas flat and top each with 1 Tbsp. of sour cream, 1 tilapia filet, 1/2 Tbsp. of jalapeño and 1 Tbsp. of pickled red onions. Take the strawberry-avocado mixture and divide equally among each taco – serve immediately.
