Strawberry Shortcake’s Ricotta Toasts
Meet avocado toast’s sweet cousin – ricotta toast. Top a slice of sourdough bread with ricotta, honey, mint, lemon zest, and thinly sliced strawberries. Using Naturipe’s strawberries will give these toasts a tart twist, and one serving of strawberries has more vitamin C than a medium orange!

INGREDIENTS
- 1 pack of Naturipe strawberries, thinly sliced
- 1 loaf of sourdough bread, sliced
- Fresh mint, minced and whole-leaved
- 3 tbsp. honey
- ½ cup ricotta cheese
- Lemon zest, grated, as desired
- Butter, as desired
DIRECTIONS
- Spread butter on bread slices, as desired. Place bread slices on a baking sheet. Bake at 375°F or until browned to your liking.
- While you’re waiting for bread to toast, combine strawberries, minced mint, and honey in a small bowl. Set aside mint leaves for decorating. In another bowl, combine ricotta and lemon zest.
- Spread ricotta mixture over toast.
- Top with strawberry mixture in a fun pattern—Strawberry Shortcake style. We recommend arranging in a thin, layered heart pattern!
