INGREDIENTS
- Pancakes
- 1 cup flour (whole wheat for a healthier twist)
- 1 tbsp baking powder
- 1 tbsp sugar (or a sweetener of your choice)
- 1/2 tsp salt
- 1 cup milk (dairy or non-dairy)
- 1 large egg
- 2 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
- 1 cup Naturipe blueberries (fresh or frozen)
DIRECTIONS
1. In a bowl, whisk together the flour, baking powder, sugar, and salt.
2. In a separate bowl, mix the milk, egg, melted butter, and vanilla extract.
3. Pour the wet ingredients into the dry ingredients and stir until just combined.
4. Gently fold in the blueberries.
5. Heat a non-stick skillet over medium heat and lightly grease it. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
6. Serve with extra blueberries, maple syrup, or your favorite toppings!
