Mixed Berry White Chocolate Frosted Cookies
Not sure if you want something fruity or chocolatey? You don’t have to decide with these yummy mixed berry cookies! Naturipe® Blackberries, Raspberries and Blueberries are the perfect addition to this rich white chocolate and cocoa cookie.
INGREDIENTS
- Cookies
- ¾ cup unsalted butter, softened
- 1 ¼ cups sugar
- 1 large egg
- ¼ cup cocoa powder
- 1 ¾ cups all-purpose flour
- 1 teaspoon vanilla extract
- ½ teaspoon salt
- 1 teaspoon baking powder
- Frosting
- ⅓ cup white chocolate, chopped
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 2 cups powdered sugar
- 2 tablespoons fresh mixed Naturipe® berries, chopped (blackberries, raspberries, blueberries)
- To serve
- ½ cup fresh mixed Naturipe® berries (blackberries, raspberries, blueberries)
DIRECTIONS
- Preheat oven to 350ºF.
- In a large bowl, cream the butter with the sugar until soft and fluffy.
- Mix egg and vanilla extract into the mixture.
- Sift in the flour, cocoa powder, baking powder and salt and mix until everything is combined.
- Cover the bowl and place in the refrigerator for 30 minutes.
- Cover a baking tray with parchment paper.
- Roll the dough into golf-sized balls and place them on the tray slightly apart from each other.
- Flatten the balls a little with your hand.
- Bake for 10-12 minutes until golden.
- Let the cookies cool down.
- Meanwhile, prepare the white chocolate frosting.
- Melt white chocolate in a microwave or a pan using a double boiler.
- Using a blender or immersion blender, blend mixed berries with vanilla extract and salt. Place in a medium-sized bowl.
- Pour melted white chocolate into bowl with the blended berry mixture.
- Slowly add powdered sugar and mix until the frosting becomes more solid.
- Cover the frosting bowl and place in the refrigerator until the cookies are baked and completely cooled down.
- Spread frosting over the cookies and top with fresh mixed berries.
