Cherry Tahini Blondies
Tahini provides the perfect toasted richness to complement lush, fresh cherries. A sprinkling of black sesame seeds adds to the visual sophistication, but they’re still amazing without. This chewy treat is sure to become a summertime recipe favorite.
INGREDIENTS
- 1 ¼ cup A/P flour
- ¾ teaspoon baking powder
- ½ teaspoon salt
- 1 ¼ cup brown sugar
- ½ cup unsalted butter, melted and cooled to room temperature
- 2 eggs
- ½ cup tahini
- 1 teaspoon vanilla
- 2 cups (pitted) Naturipe cherries
- ½ cup pistachios
- 1 teaspoon black sesame seeds (optional)
DIRECTIONS
Line an 8×8 baking pan with two rectangles of parchment or foil, crisscrossed at a 90% angle and long enough to hang over the sides of the pan. Heat oven to 350 degrees F.
Place flour, baking soda and salt in a medium bowl and stir to distribute. Combine brown sugar, butter, eggs, tahini and vanilla in a small bowl and stir to combine. Add wet ingredients to larger bowl and stir until combined and lump-free.
Spoon batter into prepare pan, top with cherries, pistachios, and sesame seeds if using, pressing gently to incorporate into batter base. Bake for 30-35 minutes or just until center no longer jiggles. Cool before lifting edges of parchment to remove from pan and cut into 9 squares.
