Cherry Almond Muffins
Brighten up your family’s breakfast with these amazing Cherry Almond Muffins. Easy to make and easy to eat, these muffins are great for enjoying with coffee or sending with your kids to school!
INGREDIENTS
- 1 1/2 cups all-purpose flour
- 3/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup vegetable oil
- 1/3 cup whole milk
- 1 egg
- 1/2 teaspoon almond extract
- 1 cup frozen Naturipe cherries, Quartered and then patted dry
- 1 tablespoon sugar
- Sliced almonds to top
DIRECTIONS
- Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
- Mix flour, 3/4 cup sugar, baking powder, and salt together in a bowl.
- In a separate small bowl, whisk oil, milk, egg, and almond extract together. Pour into flour mixture; stir gently until incorporated. Fold cherries into the batter.
- Spoon batter into the muffin cups, filling each 2/3 of the way full.
- Top each muffin with 3 sliced almonds arranged like a flower and sprinkle sugar over the top.
- Bake muffins in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Transfer to a wire rack to cool.
