Blueberry Muffin’s Original Recipe
This blueberry muffin recipe contains a full cup of blueberries – 11% of your daily fiber intake and 16% of your daily vitamin C intake! Make them to get a fresh, nutritious start on your day.

INGREDIENTS
- 1 cup Naturipe blueberries, extra for topping
- 1 ½ cups all-purpose flour
- ¾ cup sugar
- ¼ tsp. salt
- 2 tsp. baking powder
- ⅓ cup canola oil
- 1 large egg
- ½ cup milk (of your choice)
- 1 tsp. vanilla extract
- Cream cheese for topping
DIRECTIONS
- Heat oven to 400°F. Line muffin tin with paper liners. For even baking, add 3 tablespoons of water to one muffin cup (unlined).
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a medium bowl, in specific order, add oil, egg, milk, and vanilla. Whisk.
- Slowly add milk mixture to the dry ingredients, and use a fork to combine. Do not over mix. Then, fold in fresh blueberries.
- Divide the batter evenly between muffin cups. Add sprinkles of sugar on top for some extra sweetness!
- Bake for 15 to 20 minutes, or until a toothpick poked into the center of a muffin comes out clean.
- Let cool, then spread a layer of cream cheese on the top of each muffin. Decorate with Naturipe blueberries.
