Blueberry Muffin’s Original Recipe

This blueberry muffin recipe contains a full cup of blueberries – 11% of your daily fiber intake and 16% of your daily vitamin C intake! Make them to get a fresh, nutritious start on your day.

INGREDIENTS

  • 1 cup Naturipe blueberries, extra for topping
  • 1 ½ cups all-purpose flour
  • ¾ cup sugar
  • ¼ tsp. salt
  • 2 tsp. baking powder
  • ⅓ cup canola oil
  • 1 large egg
  • ½ cup milk (of your choice)
  • 1 tsp. vanilla extract
  • Cream cheese for topping

DIRECTIONS

  1. Heat oven to 400°F. Line muffin tin with paper liners. For even baking, add 3 tablespoons of water to one muffin cup (unlined).
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a medium bowl, in specific order, add oil, egg, milk, and vanilla. Whisk.
  4. Slowly add milk mixture to the dry ingredients, and use a fork to combine. Do not over mix. Then, fold in fresh blueberries.
  5. Divide the batter evenly between muffin cups. Add sprinkles of sugar on top for some extra sweetness!
  6. Bake for 15 to 20 minutes, or until a toothpick poked into the center of a muffin comes out clean.
  7. Let cool, then spread a layer of cream cheese on the top of each muffin. Decorate with Naturipe blueberries.
  8. Enjoy!
