Berry Cream Soda

What better way to cool down from a hot summer day then with a glass of scrumptious berry cream soda? Make some of these for your family and friends and enjoy the warm weather!

INGREDIENTS

  • Topping
  • 1/2 cup heavy whipping cream
  • 1 tbsp confectioners' sugar
  • Soda
  • 3 cups Naturipe Frozen Strawberries or Raspberries (let them thaw)
  • 1/2 cup sugar
  • 2-1/2 tbsp lime juice
  • 1 cup chilled carbonated water
  • Assembly
  • 2 cups vanilla ice cream

DIRECTIONS

  1. In a small metal bowl that has been refrigerated for at least 90 minutes, beat cream until it begins to thicken. Add confectioners’ sugar; beat until soft peaks form. Scrape contents together in the bowl and refrigerate until serving.
  2. Place berries, sugar and lime juice in a blender and process until pureed.
  3. Pour pureed berries into a fine-mesh strainer and press through to separate the remaining seeds from the juice into a pitcher; discard seeds. Slowly stir in carbonated water.
  4. Divide ice cream among four tall glasses. Carefully pour berry soda over ice cream. Top with fresh whipped cream and, if desired, garnish with fresh berries; serve immediately.
