Berry Cream Soda
What better way to cool down from a hot summer day then with a glass of scrumptious berry cream soda? Make some of these for your family and friends and enjoy the warm weather!
INGREDIENTS
- Topping
- 1/2 cup heavy whipping cream
- 1 tbsp confectioners' sugar
- Soda
- 3 cups Naturipe Frozen Strawberries or Raspberries (let them thaw)
- 1/2 cup sugar
- 2-1/2 tbsp lime juice
- 1 cup chilled carbonated water
- Assembly
- 2 cups vanilla ice cream
DIRECTIONS
- In a small metal bowl that has been refrigerated for at least 90 minutes, beat cream until it begins to thicken. Add confectioners’ sugar; beat until soft peaks form. Scrape contents together in the bowl and refrigerate until serving.
- Place berries, sugar and lime juice in a blender and process until pureed.
- Pour pureed berries into a fine-mesh strainer and press through to separate the remaining seeds from the juice into a pitcher; discard seeds. Slowly stir in carbonated water.
- Divide ice cream among four tall glasses. Carefully pour berry soda over ice cream. Top with fresh whipped cream and, if desired, garnish with fresh berries; serve immediately.
